Pignoletto is an ancient knowledge of the Colli Bolognesi, already mentioned by Plinio il Vecchio in Naturalis Historia in the first century AD. as "Pinum Laetum". "Wine not so sweet to be good", but this has been reported by Romans who mix honey and spices with wine!

Grape Variety: Grechetto Gentile (Pignoletto)

Alcohol Content: 12,5% Vol

Vinification:Soft pressing of whole or de-stemmed grapes at controlled temperature. The grape must derived from the first pressing is first stored in tanks and then decanted and separated from its residue. Carefully selected varietal yeasts are added, followed by a continued fermentation at 12°C. The wine is aged ‘Sur lies’ for 8-9 months. The wine is then stabilized, filtered and bottled. Subsequent cellar ageing for at least 3 months.

Known Sensory: A true cru with grapes obtained from the winery’s selected 25-year old vineyard, surrounded by lush forests and the Bologna hills. The vineyard is located at 200 metres above sea level and lies on an average gradient, facing south and consists of loose-textured soils with a loamy clay element and limestone and a slightly alkaline pH. This Pignoletto Classico can be aged and features an interesting mineral bouquet with pleasantly fragrant citrus notes. It has a dry, zesty taste, with a long finish of marzipan or sweet almond notes, typical of this grape variety.

Accomponiments: Perfect with various types of risotto, mushroom and white truffle dishes, fish tartare and white meat.
