Grape Variety: 100% Spergola

Alcohol Content: 11.5% vol.

Vinification:The grapes are hand-harvested in mid-August while still slightly under-ripe to ensure the perfect level of vibrant acidity. Following destemming, the must undergoes fermentation in temperature-controlled tanks, followed by secondary fermentation in a pressurized tank (Charmat method).

Residual Sugar: 9 g/l

Total Acidity: 7.5 g/l

Tasting Notes: Luminous straw yellow with a fine and persistent perlage. The bouquet offers elegant vegetal notes, combined with fruits such as pineapple and citron, and a subtle hint of anise. On the palate, it is fresh and sophisticated, showing great complexity and balance with a long, fruit-driven finish.

Food Pairings: Traditional Reggiano Tortelli with butter and sage, seafood salad, and steamed white fish.
