Vine: different clones of Merlot grapes.
Alcohol content: 13.5% Vol.
Vinification: After the manual harvest, the grapes are de-stemmed and crushed; then they undergo a fermentation with marc steeping for about 12 - 15 days facilitating the must / wine contact and solid parts by means of pumping over. Drained and left to ferment at a controlled temperature. Maturation in stainless steel tanks for about 12 months. Elevation in allier barriques for 3-4 months. Aging in bottle for at least 4 months.
Tasting notes: Intense ruby red wine with garnet reflections. Herbal, fruity, floral and spicy bouquet. The aromas of marasca and prunes in the spirit are well distinguished, with notes of nutmeg; finally the delicate balsamic and toasted wood scent. Balanced, harmonious and persistent.
Food matches: Main courses of red meat and game. Salama da sugo.
