Pignoletto is an ancient knowledge of the Colli Bolognesi, already mentioned by Plinio il Vecchio in Naturalis Historia in the first century AD. as "Pinum Laetum". "Wine not so sweet to be good", but this has been reported by Romans who mix honey and spices with wine!

Grape Variety: Grechetto Gentile (Pignoletto)

Alcohol content: 12% Vol

Vinification: Soft pressing of whole or de-stemmed grapes at a controlled temperature. The must is then decanted with the primary fermentation taking place in stainless steel tanks at a controlled temperature. Secondary (natural) fermentation takes place in the bottle.

Known Sensory: The wine displays the characteristic lees or yeast residue at the bottom of the bottle, typical of bottle fermented wines. The wine is a bright platinum colour caused by the fermentation residues. It has a fruity bouquet with hints of apple and pear together with yeast notes and delicate “bread crust” tones typical of bottle fermented wines. It is dry and has pleasant mineral undertones.

Accomponiments: Perfect with Emilian pasta dishes, charcuterie, as well as traditional roast poultry and rabbit.
