Grape Variety: Cabernet Sauvignon
Alcohol Content: 13% Vol
Vinification: Soft pressing and de-stemming of the grapes. Maceration in stainless steel tanks with regular plunging and fermentation at 25°C for 20 days. Subsequent malolactic fermentation at 22°C in tonneaux and batonnage. The wine is aged in new French oak barriques from Allier and Nevers for 24 months, followed by further ageing and maturation in stainless steel tanks for 12 months. Further to bottling, the wine is aged for another six months in the bottle before being sold.
Known Sensory: Red with glints of violet. Intense and varied bouquet with notes of fruit, spices and freshly roasted coffee and nuts. In the mouth, this wine strikes a perfect balance between its body, acidity and tannins and is pleasantly rounded.
Accomponiments: Roasted or grilled meats and game, braised meats, mature cheeses.
