Vinification: Hand-harvested to ensure peak quality. The must undergoes cold maceration on the skins for 12 hours at low temperatures to meticulously preserve the delicate primary aromas. Fermentation follows in temperature-controlled tanks until reaching 50 g/l of residual sugar, followed by the prise de mousse using the Charmat method. The monofermentation technique is employed to exalt the authentic, fresh characteristics of the Montericco grape.
