Vinification: Hand-harvested grapes followed by cryomaceration at 5°C to preserve the delicate primary aromas. After clarification, the wine undergoes aging in tanks on its fine lees. The secondary fermentation occurs in the bottle for at least 10-12 months using the Ancestral Method (Metodo Ancestrale), without disgorgement (retaining its natural sediment).

Total Acidity: 6.8 g/l
Tasting Notes: A delicate pale pink with a creamy mousse and fine, persistent bubbles. The bouquet offers refreshing notes of wild strawberry and pink grapefruit, complemented by herbal hints of mint and sage.
Food Pairings: Excellent with artisanal charcuterie and traditional Emilian first courses, such as Tagliattele with ragù.
