Vinification: Vineyard: Bellosguardo, south-east. 5000 plants/ht with bilateral spurred cordon. Natural fermentation for 6 months in autoclave closed, then 3 months of aging in bottle to assure hign freshess.
Sensory Notes: Colour: Antique rose with persuasive reflections of onion peel, small red fruit on the nose and bread crust, currant and pomegranate. Fresh and sapid on the palate.
Food matches: Aperitif, shellfish or meat or shellfish rolls with rolled pancetta.
