Vinification: Hand-harvested while the grapes are still slightly under-ripe to preserve the essential acidity required for this sparkling version.
Only the first press is used for temperature-controlled fermentation to ensure maximum quality. Following the secondary fermentation in the bottle, the wine undergoes an aging process of 48 months.
The bottles are placed on traditional pupitres and riddled by hand before disgorgement.

Tasting Notes: Intense straw yellow. Fine and persistent perlage. Aromas of bread crust, yellow flowers, and apple lead into a palate that is bone-dry, harmonious, and elegant, with a remarkably long finish.
