Vine variety: 100% Sorbara
Alcohol strength: 12%, acidity 9.5 g/l, dosage 5 g/l, sulfur <50 mg/l
Vinification: Selection and manual harvesting of the bunches, immediate pressing and contact on the skins for a few hours to extract the color and aromatic complexes. Fermentation of the must in thermo-conditioned steel tanks. Further selection of the wines for assembly and refermentation in the bottle for 16/18 months, subsequent disgorgement and dosage.
Sensory Notes: Decisive pink colour, excellent light and intensity. Nose: currant, strawberry, ginger, grapefruit. Great pleasure in the fine bubbles and in the mouth clean and fresh.
Gastronomic Pairings: Aperitif, oysters and shellfish, but also typical local cured meats.
