Grape Variety: 100% Lambrusco Barghi
Alcohol Content: 11% vol.
Vinification: Grapes are cultivated in the foothills of the Quattro Castella and Albinea districts. Following an extended maceration compared to other Lambrusco varieties, the wine undergoes primary fermentation and subsequent secondary fermentation, a process designed to mellow the natural angularity of the grape.
Residual Sugar: 8 g/l
Total Acidity: 7 g/l
Tasting Notes: The color is striking, reminiscent of deep blue ink. The bouquet is fragrant and balsamic, with intense notes of mulberry and wild bramble fruits. On the palate, the tannins are well-defined and prominent, leading to a pleasantly fruity finish.
Food Pairings: Artisanal cured meats and traditional Tagliatelle with ragù.
Serving Temperature: 12°C
