Details
Grape Variety: 100% Spergola
Alcohol Content: 14.5% vol.
Vinification: Hand-harvested in mid-September. The grape clusters are placed in perforated crates (7 kg each) and stored in a temperature-controlled environment for four months. By December, the grapes are pressed, yielding less than 30% of the initial weight. The wine then matures in French oak barrels for 2 years.
Residual Sugar: 150 g/l
Total Acidity: 6 g/l
Tasting Notes: Golden yellow with amber reflections. The nose offers rich aromas of ripe fruit—specifically banana and apricot—complemented by notes of dried fruit, almonds, and figs. On the palate, it is velvety, harmonious, and sophisticated.
Food Pairings: A superb "meditation wine," perfect on its own. It also pairs exquisitely with apricot tarts, dry biscuits, and blue-veined cheeses (gorgonzola/roquefort).
Serving Temperature: 12-14°C
Format: 0.75 l bottle
