Details
Grape Variety: 95% Lambrusco Montericco, 5% Croatina
Alcohol Content: 11% vol.
Vinification:Hand-harvested to ensure the integrity of the fruit. The must undergoes a cold maceration on the skins at low temperatures to preserve and capture the vibrant primary aromas. Fermentation takes place in temperature-controlled tanks until reaching 50 g/l of residual sugar, followed by the prise de mousse using the Charmat method. The monofermentation technique is specifically employed to exalt the authentic primary characteristics and fresh heritage of the Lambrusco Montericco grape.
Residual Sugar: 8 g/l
Total Acidity: 6.9 g/l
Tasting Notes: A brilliant ruby red hue. The nose opens with inviting scents of black cherries and raspberries, layered with floral notes of rose and lilac. On the palate, it is full-bodied and well-balanced, leading to a long, pleasantly refined finish.
Food Pairings: An ideal companion for traditional Emilian charcuterie, cured meats, and classic cotechino with lentils.
Serving Temperature: 13°C
Format: 0.75 l bottle
