Vine: Malvasia di Candia Aromatica

Alcohol content: 11.5% vol.

Vinification: The harvest is strictly manual and normally takes place during the first ten days of September. The grapes are placed in small crates in a single layer, which are stacked to allow the grapes to dry in the air which normally lasts from 60 to 180 days depending on the seasonal trend. The grapes are then de-stemmed and pressed: the must is fermented at a low temperature to obtain more elegant aromas. Depending on the organoleptic characteristics that will be obtained, the fermentation can be interrupted by cooling and filtering the wine in order to preserve the desired residual sugar. After bottling, a further refinement is carried out in the bottle for 3 months before the release on the market.

Sensory Notes: In the glass a brilliant golden, elegant bouquet with hints of dehydrated fruit, apricot and exotic fruits, mango and papaya, aromatic herbs and citrus fruits. Full on the palate

Gastronomic combinations: Dry biscuits and the typical "mandurlin dal pont" from Ferrara, small meringues made with almonds
