Pignoletto is an ancient knowledge of the Colli Bolognesi, already mentioned by Plinio il Vecchio in Naturalis Historia in the first century AD. as "Pinum Laetum". "Wine not so sweet to be good", but this has been reported by Romans who mix honey and spices with wine!

Grape Variety: Grechetto Gentile (Pignoletto)

Alcohol Content: 12% Vol

Vinification: Soft pressing of whole or de-stemmed grapes at a controlled temperature. The must is then decanted and is then fermented at a low temperature. Short fermentation on its lees. Secondary fermentation using the Charmat method for approximately 3 months.

Known Sensory: Vibrant straw color, hints of apple, elder flowers and hawthorn. Fresh in the mouth with citrine notes. Fine and persistent perlage.

Accomponiments. Appetizers, shellfish, fish tartare.
