Castello Montesasso farm is located on the historic village of Montesasso at the top of the rock face to the north-west of Mercato Saraceno (FC) at 380 m, where marl-colored arenaceous soils are affected by a preappennine climate for the peaks of the Tuscan-Romagna Apennine with the Fumaiolo, Aquilone and Comeroche mountains. The care of the vineyard is manual to dedicate the primary attention to the raw material, the grapes. For the holder Elisa Baraghini, the oenologist Francesco Bordini and the agronomist Remigio Bordini the wines are born: "from the knowledge of the soul of our lands, from the selection of a qualified vine, from listening to the spirit of grapes, dialogue of the vintage between earth, vine and climate and an enological approach that wants to interpret and enhance the expressive potential of our terroir. ”The wines produced are based on the CREA RLB 1 Sangiovese clone, characterized by the loose bunch that reduces fungal attacks, intensifies the sugar degree, the aromas and flavors. Another characteristic is the Gravesac rootstock, which generates an optimal vegetative-productive balance. Organic farm where the use of copper and sulfur is reduced to a minimum, below the threshold granted by organic farming, for the genetics of the vines.
