Vine: 100% Lambrusco Maestri

Alcohol content: 12% vol.

Vinification: Manual harvest with selection of the grapes. Immediately put in cement tanks for Carbon Maceration that lasts about 12/15 days. Then the whole grapes are pressed, the must rich in aromas and anthocyanins placed to ferment in stainless steel tanks at 20 ° C. This makes it possible to maintain the aromas and coloring substances typical of the Lambrusco Maestri vine. When the alcoholic fermentation is over, it is cold-pressed for tartaric stability, at the end of October it is ready for bottling.

Tasting notes: Cardinal dress with rich and precious texture, excellent density. The nose captures intense notes of ripe black berries, followed by vinosity, perfumes of fresh peonies and mentholated trail. On the palate immediately denotes character, enveloping entrance with thickness and integrity of sip, beautiful fresh-savory vein. It is dynamic, but sinuous, with gentle tannins, a pleasantly fruity rounded finish.

Food Matches: Excellent with Cappellacci with Ragù alla Ferrarese. Perfect with hors d'oeuvres based on salami and typical Emilian sausages. Suitable in combination with medium-fat grilled meats and greasiness.
